In lieu of having our very own Madam Vice President Kamala Harris we start off with
Fish Curry with Mustard and Garlic
Ingredients
1 lb white fish – about 5-6 small pieces (catfish, cod, or tilapia)
2-3 fresh tomatoes chopped
½ teaspoon mustard seeds
6 Curry leaves
4/5 cloves garlic crushed
1 green chili chopped
Cilantro chopped
Sweet Corn and Potato Biryani
Ingredients
• Ghee 1 tablespoon.
• Bay leaf - 3
• Cloves - 6
• Cinnamon stick (1 inch) 2 pieces.
• Green cardamom - 6
• Onion (sliced) - 2 medium
• Ginger garlic paste 1/2 tea spoon.
• Coriander powder 1/2 tea spoon.
• Turmeric powder 1/4 tea spoon.
• Chili powder 1 tea spoon.
• Sweet corn kernels 3/4 cup
• Potatoes (cut into small pieces ) - 3 medium
• Cilantro leaves (chopped) 1 bunch.
• Mint leaves (chopped) 1 bunch.
• Tomato puree 1 cup.
• Water 4 cups
• Basmati Rice 1 cup
• Oil 1 tablespoon.
• Salt 1 to taste.
• Fried Onions 1/2 cup.
• Lime juice 1 tea spoon.
Raita
Ingredients
• 1/2 cup plain yogurt
• 1/2 cup chopped seeded English hothouse cucumber
• 2 tablespoons chopped fresh cilantro
• 2 teaspoons chopped green onions or red onions
• 1/4 teaspoon ground coriander
• 1/4 teaspoon ground cumin
